Comfort Foods.....




I don't know if you remember a post sometime ago about this restaurant, but I wanted to share with you......ONE OF THE BEST SOUPS I HAVE EVER MADE!!!!!!! My sis bought the cookbook and passed on the recipe......now I want to share it with you:D This recipe is for "Creamy Spinach and Bacon Soup".......just perfect for approaching Fall!!!!!

Creamy Spinach and Bacon Soup

12 slices bacon, cut into small pieces
3 cups mushrooms, sliced
1/2 cup onion, chopped
1 tsp. minced garlic
2 cups water
3 TBS. chicken base
1-10 oz. pkg. frozen spinach
thawed and drained
1-8 oz. pkg. cream cheese, cubed
2 cups whipping cream
6 cups milk
1/3 cup Parmesan cheese
1/4 cup artichoke hearts, drained and chopped
1/2 cup water
3 TBS. cornstarch

In a large pot, combine bacon, mushrooms, onion, and garlic, cook over medium-high heat until bacon is cooked and vegetables are tender. Add water, chicken base and next 6 ingredients and cook, stirring grequently to prevent scorching. Mix cornstarch with water. When mixture becomes very hot, add cornstarch mixture, stirring constantly until creamy.
yield: 12 cups
